Chocolate, Melted and Tempered: Stop the Seizing, Get the Snap

Chocolate seizes into a dull lump for one heat- or water-related reason. Here is how to melt it reliably, and when tempering is actually worth it.

Chocolate behaves less like a solid and more like a delicate crystal system that you are asked to melt, hold, and sometimes re-set. Get the heat or a stray drop of water wrong and a smooth bowl of chocolate turns into a dull, stiff lump in seconds — and unlike a broken sauce, it can't be fixed by stirring harder. But chocolate is also forgiving once you understand the two things that ruin it: heat and water.

Why chocolate seizes (and the one-word fix)

Seizing is not overcooking — it's moisture. A single drop of water makes the sugar in the chocolate dissolve and glue the cocoa particles together into a stiff paste, even if you added a whole cup of it at the start and it was fine. The instant a little water sneaks in, it seizes. The rescue: add a little more warm liquid (water, cream, or melted butter), off the heat, and stir — enough liquid re-dissolves the sugar and the mass loosens back into a glossy sauce. Do not try to fix a seized lump by adding more dry chocolate or more heat. And never cover a melting bowl with a lid — trapped steam condenses and drips in.

The reliable way to melt

Chocolate's melting point is around 31–35 °C and it burns easily above that. Melt it gently and indirectly:

  • Double boiler: a heatproof bowl set over barely simmering water (the bowl must not touch the water), stirring until smooth. Keep the water gently steaming, not boiling, so no steam climbs into the bowl.
  • Microwave: chop the chocolate small, heat in 20–30 second bursts at medium-low power, stirring between each until almost fully melted — the residual heat finishes it. This is the most foolproof method because it's easy to stop early.
  • Chop chocolate evenly before melting so it melts at the same rate; large uneven chunks scorch on the outside before the middle softens.

Never melt chocolate directly over high heat or add cold liquid to hot chocolate — both shock the crystals and cause graininess or separation.

Adding liquid on purpose

You can absolutely melt chocolate with cream, butter, or other liquids — that's how ganache is made — as long as the liquid is warm and you add it in one go, not a drop at a time. Warm cream plus chocolate, left to sit a minute, then stirred, gives a glossy ganache; adding it a drop at a time is what causes the seize.

Tempering: when it's worth it

Tempering is controlled heating and cooling that sets chocolate's cocoa butter into the right crystal form — it's what gives dipped truffles, molded bars, and chocolate bark their snap, shine, and room-temperature stability. Untempered chocolate sets soft, dull, and streaky and melts on your fingers. The classic method: melt to about 45–48 °C, cool to about 27–28 °C (for dark; slightly higher for milk and white) while stirring, then re-warm to working temperature (31–32 °C dark), keeping it in that range while you dip. It sounds fussy because it is — but you only need it when chocolate is the star, like coating or molding. For brownies, mousse, or ganache fillings where the chocolate is mixed into something, untempered melted chocolate is perfectly fine and you can skip the thermometer entirely.

Choosing and storing chocolate

Cook with chocolate you'd happily eat — the cocoa content is on the label (55–70% for most baking). Store it cool and dry, away from strong smells (it absorbs odors), wrapped to keep out moisture. Chocolate lasts a long time; a white-gray bloom on the surface is cocoa butter that melted and re-set — it's cosmetic, not spoilage, and it melts away when you use it.

The takeaway: melt chocolate gently, add any liquid warm and all at once, and never let a stray drop of water in. Temper only when the chocolate is the star; otherwise simple melted chocolate does the job.
