Sugar Stages: A Temperature Guide to Fudge, Toffee, and Caramel

Candy is boiled sugar — and boiling sugar is a thermometer sport. Thread, soft ball, hard crack, caramel: what each stage means and what to make with it.

Candy making looks like magic and is actually arithmetic. Sugar dissolved in water boils; as the water evaporates, the syrup gets more concentrated and its boiling point rises. The temperature of the syrup is the recipe: every candy — fudge, toffee, marshmallow, caramel — is the same pot of sugar stopped at a different temperature. That's why a candy thermometer costs less than one ruined batch, and why the stages below are the whole discipline.

The stages, from thread to caramel

As the syrup boils, it passes through named stages, each with a cold-water test and a classic use:

  • Thread (104–113 °C): drizzled into cold water it forms a thin thread. Simple syrups, candied fruit.
  • Soft ball (113–118 °C): forms a ball that flattens when lifted. Fudge, pralines, Italian meringue.
  • Firm ball (118–124 °C): holds its shape, flattens under pressure. Caramels, nougat.
  • Hard ball (124–132 °C): firm and bendable. Marshmallows, divinity, gummies.
  • Soft crack (132–143 °C): threads bend before snapping. Nougat, taffy.
  • Hard crack (143–154 °C): threads snap cleanly. Toffee, brittle, lollipops.
  • Caramel (154 °C+): the syrup turns amber — now you judge by color, not by the water test. Sauce, flan, praline.

The cold-water test

No thermometer? Drop a small spoonful of syrup into a glass of cold water, wait a second, and feel it: thread, soft ball, firm ball, hard ball, soft crack, hard crack — the stages are literally named after what the cooled syrup does. The test is accurate and ancient. But a thermometer is faster and repeatable, which matters because the syrup moves through some stages in seconds.

Three rules that save the batch

  1. Pull the pot 1–2 °C early. Residual heat keeps the syrup climbing after you turn off the burner. A batch aimed at hard crack that stops at 154 °C will reach 156 °C in the pot and cross into caramel.
  2. Watch the edges. Crystals forming on the pot wall can seed the whole batch and turn syrup gritty. Wipe the sides with a wet pastry brush as it boils, or add a spoonful of corn syrup or lemon juice to inhibit crystallization.
  3. Altitude shifts everything. Water boils lower at altitude, and so do your stages: subtract about 1 °C per 300 m above sea level.

Caramel: where the magic and the danger are

Above 154 °C, the sugar itself starts to break down and brown — this is caramelization, the same reaction that colors roasted vegetables. The window from pale gold to perfect amber is short, and molten sugar is hotter than boiling water: it sticks to skin and burns deep. Use a long-handled spoon, never taste-test hot syrup, and if the caramel reaches dark brown with smoke, it's bitter — start over. Sugar is cheap; patience is the ingredient.
