The Coffee-to-Water Ratio, Solved

Most bad coffee is a ratio problem, not a bean problem. Here is the 1:15–1:17 range for filter coffee, a calculator that does the math, and a 4-minute brew timer.

Coffee is the most cooked thing in your kitchen that you probably never measure. A heaped spoon of this, a splash of that — and the result changes from day to day. The fastest upgrade in all of coffee is to measure it. One number, the coffee-to-water ratio, fixes more bad cups than a better grinder, a better brewer, or a better bean.

The ratio, and why it works

Filter coffee lives in the range of 1:15 to 1:17 — one part coffee to fifteen to seventeen parts water, by weight. That is roughly 60–66 g of coffee per litre of water. Below 1:14 you are pushing strong; above 1:18 the cup starts to taste thin and hollow.

  • 1:12–1:13 — strong. Bold, heavy body; works with milk.
  • 1:15 — balanced, the daily-drinker default.
  • 1:17–1:18 — mild and clean, shows off delicate single origins.

Weights matter more than volumes because coffee density varies with roast and grind. A "tablespoon" of light roast weighs differently from a tablespoon of dark. A scale costs the same as a bag of beans and changes every brew from a guess into a recipe.

Grind and water temperature

The ratio sets the strength; grind and temperature set the extraction. For pour-over (V60, Chemex) use a medium grind — like coarse sand. For AeroPress, medium-fine. Water at 92–96 °C: bring to a boil, wait about a minute, and you are there. Boiling water scorches the grounds and turns the cup bitter; too-cool water under-extracts and tastes sour.

The brew, in three moves

  1. Bloom: pour twice the coffee's weight in water (30 g coffee → 60 g water) and wait 30 seconds. The grounds swell and release CO₂; skipping this step is the most common pour-over error.
  2. Pour the rest in two or three gentle pours, keeping the bed wet. Total brew time: about 3:30–4:00.
  3. Finish: swirl the server once before pouring so the cup is uniform — the last third of the brew is the strongest.

Dialing in by taste

  • Sour, thin, quick — under-extracted. Grind finer, use hotter water, or pour more slowly.
  • Bitter, dry, astringent — over-extracted. Grind coarser, cooler water, or shorter brew.
  • Weak but balanced — strength problem, not extraction: use a lower ratio (more coffee).

Change one variable at a time. Coffee is the best debugging exercise in the kitchen — the feedback loop is four minutes long.
